These tropical Pineapple Coconut Lime Pops combine fresh pineapple, creamy coconut milk, and zesty lime for a refreshing frozen treat. Perfect for summer, they're easy to make and offer a burst of flavor in every bite. A hit with kids and adults alike!

Ingredients
  

  • 1 cup fresh pineapple, chopped
  • 1/2 cup coconut milk
  • Juice of 1 lime
  • 1–2 tablespoons honey (to taste)

Instructions
 

  • In a blender, combine 1 cup of chopped pineapple, 1/2 cup of coconut milk, the juice of 1 lime, and 1–2 tablespoons of honey
  • Blend until smooth and creamy
  • Taste the mixture; adjust honey if needed and blend again
  • Pour the mixture into popsicle molds, filling to the top
  • Insert popsicle sticks and close molds with caps if provided
  • Freeze for at least 4 hours or until solid
  • Run warm water over molds to release pops

Notes

Use fresh pineapple for optimal flavor (canned is a substitute but affects taste)
Adjust sweetness with agave syrup or maple syrup if preferred
Blend thoroughly to avoid chunks
Coconut cream can be used for a richer texture
Add mango or kiwi for a fruit-infused twist
Store frozen pops up to 2 months in an airtight container
