Ingredients
  

  • 4 chicken breasts
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • Prepare pasta according to package instructions. Drain and set aside.
  • Heat 1 tbsp olive oil in a skillet. Season chicken with salt and pepper. Sear for 5–6 minutes per side; remove and set aside.
  • Add more olive oil if needed. Sauté garlic for 30 seconds.
  • Add sun-dried tomatoes and stir for 1 minute. Pour in heavy cream and stir continuously.
  • Mix in Parmesan and Italian seasoning. Simmer 3–4 minutes to thicken.
  • Return chicken to the skillet and simmer 3–4 minutes with the sauce.
  • Toss pasta into the skillet to coat; serve hot.

Notes

Use fresh chicken and quality Parmesan for optimal flavor. Monitor chicken doneness with a meat thermometer (165°F internal temperature). Adjust creaminess with heavy cream or substitute half-and-half for a lighter option.
