Ingredients
  

  • 2 boneless, skinless chicken breasts (about 1 pound), diced
  • 8 ounces pasta (penne or fettuccine)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon (juice and zest)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1/4 cup fresh parsley, chopped

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add chicken and season with salt, pepper, oregano, and thyme. Cook 5-7 minutes until browned and cooked through.
  • Add garlic and sauté 1 minute until fragrant.
  • Pour in chicken broth and lemon juice/zest. Simmer briefly.
  • Stir in pasta, let cook per package instructions (absorb broth).
  • Remove from heat. Stir in fresh parsley. Serve warm.
