Ingredients
  

  • 4 cups fresh peaches, peeled and sliced
  • 2 cups mixed berries (blueberries, raspberries, or strawberries)
  • 1 cup granulated sugar, divided
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 3/4 cup milk
  • 1/2 teaspoon cinnamon (optional)

Instructions
 

  • Combine sliced peaches and mixed berries in a large bowl
  • Sprinkle with 1/2 cup sugar, cornstarch, lemon juice, and vanilla extract
  • Gently toss to coat and macerate for 10 minutes
  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish
  • Whisk together flour, baking powder, salt, and remaining 1/2 cup sugar in another bowl
  • Stir in melted butter and milk until just combined, leaving some lumps in the batter
  • Pour fruit mixture into the baking dish and spread evenly
  • Drop spoonfuls of the batter over the fruit to cover
  • Bake for 35 minutes or until golden and bubbly
  • Let cool for 10 minutes before serving

Notes

Use fresh, ripe fruit when available; if frozen, drain excess liquid before using
For extra flavor, add a pinch of nutmeg with cinnamon in the topping
Best served warm; can be stored in the fridge for up to 3 days
