Ingredients
  

  • 1 cup dried red beans
  • 2 cups water (for soaking)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 lb gluten-free turkey sausage, sliced
  • 3 cups vegetable broth
  • 1 cup long-grain white rice
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions
 

  • Soak beans in water for 6+ hours or overnight. Use canned beans for convenience.
  • Heat olive oil in a pot, sauté onion, garlic, and bell pepper for 5 minutes.
  • Stir in Cajun seasoning and smoked paprika, cooking for another minute.
  • Add turkey sausage and cook 5-7 minutes until browned.
  • Drain soaked beans, then add to pot with vegetable broth. Bring to boil, reduce heat, and simmer 20-25 minutes.
  • Meanwhile, boil 2 cups water in a rice pot, add rice, cover, and simmer 15 minutes.
  • Season bean mixture with salt and pepper. Serve over rice with green onion garnish.

Notes

Use smoked turkey sausage for deeper flavor
For faster cooking, use canned beans (rinse and drain)
Ideal with crusty bread for dipping in the rich broth
