Ingredients
  

  • 8 ounces fettuccine pasta
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 tablespoon olive oil
  • 3 cloves minced garlic
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese (non-animal-based/nutritional yeast for halal option)
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions
 

  • Heat olive oil in a large pan over medium heat
  • Add cubed chicken and season with salt and pepper; cook 5-7 minutes until browned
  • Sauté minced garlic in the pan for 1 minute until fragrant
  • Add asparagus pieces and cook 3-4 minutes until tender-crisp
  • Boil pasta separately in salted water until al dente, drain, and set aside
  • Stir heavy cream into the pan, simmer 2-3 minutes
  • Add cooked pasta and Parmesan cheese substitute; toss to coat
  • Adjust seasoning and garnish with fresh parsley before serving
