Ingredients
  

  • 8 ounces elbow macaroni or pasta of choice
  • 2 cups smoked Gouda cheese, grated
  • 1 cup sharp cheddar cheese, grated
  • 2 cups whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)

Instructions
 

  • Preheat oven to 350°F (175°C)
  • Cook pasta until al dente and drain
  • In a pot, melt butter, then whisk in flour for 1 minute to form a roux
  • Gradually add milk while whisking until thickened
  • Stir in garlic powder, onion powder, salt, and pepper
  • Remove from heat and mix in cheeses until melted and smooth
  • Fold in cooked pasta until well coated
  • Transfer to a greased baking dish and top with breadcrumbs if using
  • Bake for 20 minutes until golden and bubbly

Notes

For creamier texture, add extra milk or cream. Mix in Monterey Jack or Parmesan for varied flavor. Avoid overcooking pasta. Add cayenne or smoked paprika for spice. Let cool slightly before serving.
