Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 pound asparagus, trimmed
  • 1 teaspoon dried Italian herbs (or mix of oregano and basil)
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish (optional)

Instructions
 

  • Season the chicken breasts with salt, pepper, and Italian herbs on both sides.
  • In a large skillet over medium-high heat, add olive oil. Once heated, add the chicken breasts and sear for about 5-6 minutes on each side until golden brown and cooked through.
  • Lower the heat to medium, and add the minced garlic to the pan. Cook for about 1 minute until fragrant, being careful not to burn it.
  • Pour in the chicken broth and allow it to simmer for 2-3 minutes, scraping any browned bits from the bottom of the pan. Stir in the heavy cream and keep stirring until the sauce thickens slightly.
  • Place the trimmed asparagus into the skillet. Cook for an additional 6-8 minutes, or until the asparagus is tender but still crisp.
  • Return the chicken to the skillet, allowing it to soak in the creamy sauce for a minute. Adjust seasoning if necessary.
  • Plate the chicken and asparagus, spooning extra sauce over the top. Garnish with grated Parmesan if desired.

Notes

For added flavor, marinate the chicken in garlic and herbs for a few hours before cooking.
Make sure not to overcrowd the pan; cook the chicken in batches if necessary.
Adjust the thickness of the sauce by varying the amount of cream or broth to your preference.
To add a bit of brightness, a squeeze of fresh lemon juice can elevate the flavor of the dish.
