Ingredients
  

  • 1 cup dried red kidney beans, soaked overnight
  • 1 cup long-grain white rice
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon thyme
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions
 

  • Rinse soaked kidney beans and drain
  • Heat olive oil in a pot over medium heat
  • Add onion, bell pepper, and celery; sauté 5-7 minutes
  • Stir in garlic, Cajun seasoning, cayenne, oregano, and thyme; cook 2 minutes
  • Pour in vegetable broth, boil, add beans, cover, and simmer 30 minutes
  • Cook rice separately using 2 cups water per 1 cup rice, simmering 20 minutes
  • Season bean mixture with salt and pepper; mash some beans for creaminess
  • Serve beans over rice, garnished with green onions
