  • 8 oz elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups whole milk
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions
 

  • Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook until al dente, 8-10 minutes. Drain and set aside.
  • Prepare the Cheese Sauce: In a saucepan, melt butter over medium heat. Whisk in flour to form a roux, cooking for 2 minutes until golden.
  • Add Milk: Gradually whisk in whole milk, ensuring no lumps. Cook 5-7 minutes until thickened.
  • Incorporate Cheeses: Stir in cheddar and mozzarella cheeses until melted and smooth.
  • Season: Add salt, black pepper, and paprika (if using). Adjust seasoning to taste.
  • Combine Pasta and Sauce: Add cooked pasta to the sauce; mix until evenly coated.
  • Bake (Optional): Preheat oven to 350°F (175°C). Pour mixture into a greased baking dish, top with breadcrumbs, and bake 20 minutes until golden.
  • Serve: Use immediately while warm.

Notes

For extra flavor, substitute mozzarella with gouda or fontina cheese.
Add cream cheese for a silkier texture.
Spice it up with 1/4 tsp cayenne pepper in the sauce.
Prepare sauce while pasta cooks to save time.
Use 2% milk for a lighter version if preferred.
