Ingredients
  

  • 2 cups dried red beans
  • 1 cup long-grain white rice, rinsed
  • 1 pound turkey sausage, sliced
  • 1 medium onion, finely chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 6 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions
 

  • Rinse dried red beans under cold water, discarding debris or damaged beans.
  • In a slow cooker, combine rinsed beans, turkey sausage, chopped onion, green bell pepper, minced garlic, thyme, smoked paprika, and cayenne pepper.
  • Pour in vegetable broth and stir to combine.
  • Cover and cook on low for 6 hours.
  • After 5 hours, add rinsed rice to the slow cooker, stir well, and continue cooking for the final hour.
  • Adjust seasoning with salt and pepper before serving.
  • Serve hot, garnished with chopped green onions.

Notes

For creamier beans, soak overnight before use.
Add a bay leaf for extra flavor.
Adjust cayenne or add jalapeños for spiciness.
Chop veggies and prep sausage ahead of time to save effort.
Omit or substitute turkey sausage for a vegetarian option.
