Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buttermilk
  • Oil for frying

Instructions

  • Marinate chicken pieces in buttermilk for at least 30 minutes or overnight.
  • Combine flour, smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper in a bowl.
  • Dredge chicken in flour mixture until fully coated.
  • Heat oil in a skillet or fryer to 350°F (175°C).
  • Fry chicken in batches until golden brown and internal temperature reaches 165°F (74°C), about 5-7 minutes.
  • Drain excess oil on paper towels.
  • Serve hot with dipping sauce.

Notes

For extra crunch, double-dip: coat in flour mixture twice after marinating.
Let chicken rest for 5 minutes after coating to ensure breading sticks properly.
