Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 2 tablespoons hot chicken seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Vegetable oil (for frying)
  • 8 small flour tortillas
  • 1 cup coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • Fresh dill (optional, for garnish)

Instructions

  • Marinate chicken thighs in buttermilk for 1 hour (or overnight).
  • Combine flour, hot chicken seasoning, garlic powder, salt, and pepper in a bowl.
  • Dredge chicken in flour mixture until fully coated.
  • Heat oil in a skillet over medium-high heat; fry chicken 6-8 minutes per side until crispy and internal temperature reaches 165°F.
  • Let chicken drain on paper towels.
  • Mix coleslaw with mayonnaise, vinegar, and honey.
  • Warm tortillas, then assemble with chicken and slaw. Garnish with dill if desired.

Notes

Double-dip chicken for extra crispiness (marinate, dredge, dip again in buttermilk, then flour).
Adjust spice with more or less seasoning.
Use fresh tortillas and warm before serving.
Customize slaw with jalapeños or cilantro.
