Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped, packed in oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup fresh basil, chopped (for garnish)
  • Optional substitution: 1/2 cup plain Greek yogurt (instead of heavy cream) for a lighter version

Instructions
 

  • Heat olive oil in a large skillet over medium heat
  • Season chicken breasts on both sides with salt and pepper
  • Sear chicken breasts for 5 minutes per side until golden brown and cooked through
  • Transfer chicken to a plate and set aside
  • In the same skillet, add minced garlic and cook for 1 minute until fragrant
  • Pour in heavy cream (or Greek yogurt) and add chopped sun-dried tomatoes with oil and Italian seasoning
  • Stir well to combine, bring the mixture to a gentle simmer
  • Return chicken breasts to the skillet, simmer for an additional 5-10 minutes until the sauce thickens and flavors meld
  • Garnish with fresh basil and serve hot over rice or pasta
