Ingredients
  

  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil or unsalted butter
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C)
  • Mash bananas with a fork until mostly smooth
  • Stir in melted coconut oil (or butter) and granulated sugar
  • Beat in the egg and vanilla extract
  • Sprinkle baking soda and salt; mix to combine
  • Fold in flour until just combined
  • Stir in chocolate chips until evenly distributed
  • Pour batter into a greased 9x5-inch loaf pan
  • Bake for 60 minutes or until golden and a toothpick comes out clean
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely

Notes

Use very ripe bananas with brown spots for maximum sweetness
Ripe bananas can be frozen for later use in this recipe
Let the bread cool completely before slicing to prevent crumbly texture
For a nutty twist, add 1/2 cup chopped walnuts or pecans
Store in an airtight container at room temperature for up to 3 days
