Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, chopped (for garnish)

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat.
  • Season both sides of the chicken breasts with salt and pepper, and place them in the skillet. Sear each side for about 5 minutes until golden brown.
  • Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  • Stir in the cherry tomatoes, and cook until they start to soften, about 3-4 minutes.
  • Reduce the heat to medium and pour in the heavy cream, mixing well with the tomatoes and garlic.
  • Sprinkle the Italian seasoning over the sauce, and allow it to simmer for 5 minutes, stirring occasionally.
  • Return the cooked chicken to the skillet and spoon the sauce over the top. Simmer for 2-3 minutes.
  • Garnish with fresh basil before serving!

Notes

For added flavor, marinate the chicken in Italian herbs for an hour before cooking.
Ensure the skillet is hot before searing the chicken.
Use a meat thermometer to check the chicken reaches 165°F (75°C).
Add red pepper flakes for a spicy twist.
Pair with steamed vegetables or pasta for a complete meal.
For a lighter version, substitute heavy cream with coconut cream or cashew cream.
Add spinach or kale to the sauce for extra nutrients.
Store in an airtight container in the fridge for up to 3 days. Reheat gently on the stove.
