Ingredients
  

  • 4 boneless chicken breasts (about 1 inch thick)
  • 1 cup chicken broth
  • 1 medium onion, sliced
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon thyme (optional)

Instructions
 

  • Season chicken breasts with salt, pepper, garlic powder, and paprika on both sides
  • Dredge the seasoned chicken in flour, shaking off excess
  • Heat olive oil in a skillet over medium heat. Sear chicken for 4-5 minutes per side until golden brown, set aside
  • Add onions to the skillet and sauté until soft and translucent
  • Return chicken to the skillet, add chicken broth, and scrape up browned bits
  • Reduce heat, cover, and simmer for 20 minutes until chicken is tender
  • Remove chicken and set aside. Add butter to the skillet and stir to create a gravy
  • Return chicken to the skillet, spoon gravy over them, and cook 2-3 minutes more
  • Serve with favorite sides

Notes

Use a meat thermometer for chicken (165°F doneness)
Add fresh herbs like thyme or rosemary to the gravy
Let chicken rest 5 minutes before serving for juicier results
If needed, add 1/4 cup milk to thin the gravy before serving
