Ingredients
  

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 1 cup beef broth or water

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and sauté until translucent for 5 minutes.
  • Stir in minced garlic and cook 1-2 minutes until fragrant.
  • Increase heat to medium-high, add ground beef, and cook 5-7 minutes until browned.
  • Drain excess fat (if necessary), then add chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Toast the spices for 1-2 minutes.
  • Stir in crushed tomatoes and beef broth (or water). Combine thoroughly.
  • Add kidney beans and black beans, bring to a simmer.
  • Reduce heat to medium-low, cover, and simmer 1 hour with occasional stirring.
  • Adjust seasoning and serve hot with toppings like cheese or sour cream.

Notes

Use lean ground beef (80/20) for a balanced flavor profile.
Mix in additional beans like pinto or cannellini for texture variation.
For extra heat, substitute 1-2 finely chopped jalapeños for the cayenne pepper.
Store in an airtight container (refrigerated up to 4 days or frozen up to 3 months).
Thicken chili by simmering uncovered during the last 15-20 minutes.
