Ingredients
  

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 8 oz pasta (penne or fettuccine)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Cook the pasta in salted boiling water until al dente, then drain.
  • In a skillet, sauté chicken with olive oil, salt, and pepper until golden (5-7 min). Remove chicken.
  • Add more olive oil if needed, then sauté garlic until fragrant (1 min).
  • Pour in chicken broth and heavy cream. Stir, bring to simmer, and cook for 5 minutes until slightly thickened.
  • Stir in Parmesan cheese until melted, then return chicken and pasta to the skillet. Mix thoroughly.
  • Adjust seasoning and garnish with fresh parsley before serving.
