Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1 inch thick)
  • 4 cloves of garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter

Instructions
 

  • Pat the chicken breasts dry with a paper towel. Season both sides generously with salt and black pepper.
  • In a small bowl, mix minced garlic, chopped rosemary, and thyme with 1 tablespoon of olive oil.
  • Rub the garlic herb mixture onto both sides of the chicken breasts. Let sit for 10 minutes to absorb flavors.
  • Heat a large skillet over medium-high heat and add the remaining olive oil and butter. Allow it to get hot but not smoking.
  • Place the marinated chicken breasts in the skillet. Cook for 6-7 minutes on one side without disturbing to develop a crust.
  • Turn the chicken breasts over and cook for an additional 6-7 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove the chicken breasts from the skillet and let rest for 5 minutes before serving.

Notes

Use a meat thermometer to ensure safe temperature without overcooking.
For extra flavor, marinate the chicken for 2-4 hours or overnight.
Cast-iron skillets yield the best sear and heat retention.
Serve with roasted vegetables, mashed potatoes, or crusty bread.
