Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1/2 cup honey
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce (low-sodium preferred)
  • 1 cup chicken broth
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup chopped green onions, for garnish (optional)

Instructions
 

  • Preheat oven to 350°F (175°C)
  • In a large bowl, combine honey, garlic, soy sauce, chicken broth, ground ginger, and black pepper to create the marinade
  • Add chicken breasts to the marinade and coat thoroughly; let sit for 10 minutes
  • Rinse rice under cold water until water runs clear
  • Spread rinsed rice evenly in a 9x13-inch baking dish
  • Heat olive oil in a pan over medium heat; sear chicken for 2-3 minutes per side until golden brown
  • Place seared chicken on top of the rice in the baking dish
  • Pour remaining marinade over chicken and rice, then cover tightly with aluminum foil
  • Bake for 40 minutes, then remove foil and bake 5-10 minutes more to thicken the sauce
  • Garnish with green onions and let rest for 5 minutes before serving

Notes

Marinate chicken overnight for deeper flavor
Substitute brown rice for a nuttier flavor and more fiber
Add vegetables like bell peppers or broccoli to the rice layer
Use fresh garlic for optimal flavor. Adjust soy sauce and honey ratios to taste preferences.
