Ingredients
  

  • 2 chicken breasts, cut into strips
  • 1 cup mushrooms, sliced
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 onion, finely chopped
  • 2 tablespoons butter

Instructions
 

  • Heat a large skillet over medium heat and add the butter. Once melted, add the chicken strips and cook until lightly browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  • In the same skillet, add the chopped onion and sauté for about 3-4 minutes until softened and translucent.
  • Add the sliced mushrooms to the skillet and sauté for 5 minutes until they are tender and browned.
  • Return cooked chicken to the skillet, then pour in chicken broth. Stir and simmer for 3-4 minutes.
  • Reduce heat to low and stir in sour cream. Mix until creamy and heated through (do not boil).
  • Serve over rice or egg noodles.

Notes

Season chicken with salt and pepper for deeper flavor.
Sauté onions and mushrooms thoroughly for caramelization.
Thicken sauce with 1 tsp cornstarch mixed in 1 tbsp water.
