Ingredients
  

  • 3 cups rhubarb, chopped
  • 3 cups strawberries, sliced
  • 1 cup sugar
  • 2 tbsp cornstarch
  • 1 cup oats
  • 1/2 cup flour
  • 1/2 cup butter, softened

Instructions
 

  • Preheat oven to 350°F (175°C)
  • Combine rhubarb, strawberries, 1 cup sugar, and 2 tbsp cornstarch in a bowl. Mix until coated
  • Transfer to a greased baking dish
  • Mix oats, flour, and butter in another bowl until crumbly
  • Sprinkle oat topping over fruit
  • Bake for 35-40 minutes until golden brown and bubbling

Notes

Add cinnamon for extra depth
Use fresh, firm rhubarb
Adjust strawberry/rhubarb ratio to taste
Let cool 10 minutes before serving
