  • Preheat your grill to medium heat.
  • Season chicken breasts with olive oil, salt, and pepper.
  • Grill chicken for 6-8 minutes per side until internal temperature reaches 165°F (75°C).
  • Combine halved cherry tomatoes and chopped basil in a bowl; drizzle with olive oil, salt, and pepper.
  • Rest grilled chicken for 5 minutes before slicing into diagonal strips.
  • Toast bread slices on the grill until golden and crispy (2-3 minutes per side).
  • Assemble the sandwich: Place chicken strips on toasted bread, top with tomato-basil mixture, add mozzarella cheese, and optionally drizzle balsamic glaze before adding the second slice of bread.
