Ingredients
  

  • 3 large ripe bananas, mashed
  • 1/2 cup peanut butter (creamy or chunky)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray or butter
  • Combine mashed bananas, peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until smooth
  • Whisk together flour, baking soda, salt, and cinnamon in a separate bowl
  • Gradually fold dry ingredients into wet ingredients until just combined
  • Pour batter into prepared loaf pan and smooth top with a spatula
  • Bake for 60 minutes or until a toothpick inserted comes out clean
  • Cool in pan for 10 minutes, then transfer to wire rack to cool completely

Notes

Use overripe bananas for maximum sweetness
Add chopped nuts or chocolate chips for extra texture
Cover with foil for last 10 minutes of baking if browning too quickly
Let rest overnight for enhanced moisture
Peanut butter can be swapped for almond or sunflower seed butter
