Ingredients
  

  • 8 oz spaghetti
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions
 

  • Boil salted water in a large pot. Add spaghetti and cook until al dente. Reserve ½ cup pasta water and drain the rest.
  • Heat olive oil in a skillet. Season chicken with salt and pepper, then cook until golden and cooked through (6-8 mins). Remove chicken.
  • Add garlic to the skillet and sauté 30 seconds. Pour in chicken broth, scraping browned bits, and simmer 2-3 mins.
  • Stir in heavy cream and Italian seasoning, then add spinach and simmer until wilted.
  • Return chicken to the skillet. Add pasta water to thin the sauce if needed. Toss in cooked spaghetti until coated.
  • Serve hot, garnished with Parmesan.

Notes

Marinate chicken in Italian herbs for 30 mins for deeper flavor.
Use fresh spinach (or kale) for best texture.
Reserve pasta water for sauce consistency.
Top with fresh herbs like basil for extra aroma.
