  • 4 boneless chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tablespoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 4 hamburger buns
  • 1 cup pickles
  • 1/2 cup mayonnaise
  • 2 tablespoons hot sauce

  • Marinate the Chicken: In a bowl, combine buttermilk, cayenne pepper, paprika, garlic powder, onion powder, salt, and pepper. Add chicken thighs, submerge, and refrigerate for 30 minutes or overnight.
  • Prepare the Breading: In a dish, mix flour, cayenne pepper, paprika, garlic powder, onion powder, salt, and pepper.
  • Heat the Oil: In a skillet, heat vegetable oil to 350°F (175°C).
  • Bread the Chicken: Dredge marinated chicken in seasoned flour, pressing to adhere.
  • Fry the Chicken: Fry chicken for 5-7 minutes per side until golden and cooked through (165°F/75°C). Drain on paper towels.
  • Prepare the Sauce: Mix mayonnaise and hot sauce; adjust spiciness to taste.
  • Assemble the Sandwich: Spread sauce on buns, layer with fried chicken and pickles, then close the sandwiches.

Marinate overnight for richer flavor. Use a thermometer to maintain oil temperature. Adjust hot sauce for spice level.
