Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 cup cherry tomatoes, diced
  • 1 cup fresh mozzarella cheese, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions
 

  • Preheat oven to 375°F (190°C)
  • Season chicken breasts with salt, pepper, garlic powder, and onion powder
  • Heat olive oil in an oven-safe skillet over medium-high heat
  • Sear chicken breasts 3-4 minutes per side until golden
  • Mix tomatoes, mozzarella, basil, balsamic vinegar (if using), and a pinch of salt for the topping
  • Spoon the mixture over each chicken breast
  • Transfer skillet to oven and bake 20 minutes or until cheese is golden
  • Let rest 5 minutes, then spoon juices over chicken before serving
