Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup balsamic vinegar
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped (or 1 teaspoon dried)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C)
  • In a large bowl, whisk balsamic vinegar, olive oil, garlic, salt, and pepper
  • Add cherry tomatoes and basil to the bowl; stir to combine
  • Place chicken breasts in a greased baking dish and pour the balsamic tomato mixture over them
