Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 cup balsamic vinegar (optional, for drizzle)

Instructions
 

  • Preheat oven to 375°F (190°C)
  • In a bowl, combine halved cherry tomatoes, chopped basil, minced garlic, olive oil, salt, and pepper
  • Season both sides of the chicken breasts with salt and pepper and place in a baking dish
  • Spoon the tomato mixture evenly over each chicken breast
  • Bake for 30 minutes or until the chicken reaches an internal temperature of 165°F (75°C)
  • If using, drizzle balsamic vinegar over the chicken before serving
  • Let the chicken rest for a few minutes, then serve over rice, pasta, or as a standalone dish

Notes
