Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup fresh strawberries, pureed
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons cornstarch

Instructions
 

  • Preheat oven to 350°F (175°C)
  • Line an 8x8 inch baking pan with parchment paper
  • Whisk flour, sugar, melted butter, and salt until crumbly
  • Press crust into pan and bake 15-18 minutes
  • Cool slightly while preparing filling
  • Whisk eggs, strawberries, lemon juice, zest, and cornstarch
  • Pour mixture over warm crust
  • Bake 20-25 minutes until set
  • Cool 30 minutes, then chill 1-2 hours
  • Dust with powdered sugar before serving
