Ingredients
  

  • 4 bone-in chicken thighs
  • 1 medium onion, sliced
  • 2 cups chicken broth (or vegetable broth)
  • 1 cup all-purpose flour
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

  • Season both sides of chicken thighs with salt, pepper, garlic powder, and onion powder
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs for 4-5 minutes per side until golden brown. Set aside
  • Melt butter in the same skillet and add sliced onions. Sauté until translucent and caramelized, 5 minutes
  • Sprinkle flour over onions, stir and cook for 1 minute
  • Gradually whisk in chicken broth, stirring constantly to prevent lumps. Bring to simmer
  • Return chicken thighs to skillet, spoon gravy over the top. Cover and simmer on low heat for 20 minutes until tender
  • Serve smothered in gravy with favorite side dishes

Notes

Rest chicken thighs 5 minutes for juicier results
Add soy sauce or vegetarian Worcestershire for depth
Use cornstarch slurry for thicker gravy
Serves perfectly with mashed potatoes or rice
