Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1/2 cup mozzarella cheese, shredded

Instructions
 

  • Preheat your oven to 375°F (190°C)
  • Season the chicken breasts with salt and pepper on both sides
  • Place seasoned chicken in a greased baking dish and bake for 20-25 minutes until cooked through
  • In a bowl, combine cherry tomatoes, fresh basil, garlic, olive oil, and balsamic vinegar. Season with salt and pepper
  • Spoon bruschetta mixture over baked chicken breasts
  • Sprinkle mozzarella cheese on top if using
  • Return to oven for 5-10 minutes until cheese is bubbly
  • Let rest 5 minutes before serving

Notes

For juicier chicken, marinate in olive oil, balsamic, salt, and pepper for 30 minutes
Chop tomatoes and basil just before serving for freshness
Add red pepper flakes for a spicy kick
