Ingredients
  

  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 4 sub rolls
  • Fresh basil leaves (optional)

Instructions
 

  • Preheat oven to 375°F
  • Pat chicken breasts dry and season with salt and pepper
  • Mix breadcrumbs, Parmesan, and garlic powder in a shallow bowl
  • Coat each chicken breast evenly in the breadcrumb mixture
  • Bake for 25-30 minutes, until golden and chicken reaches 165°F
  • Spread 1/2 cup marinara over each baked chicken breast
  • Top with mozzarella and return to oven for 5-7 minutes to melt cheese
  • Slice sub rolls lengthwise and lightly toast if desired
  • Place filled chicken into rolls and serve warm
  • Add extra marinara and basil for garnish

Notes

Add egg for double breading and extra crunch
Enhance flavor with oregano or thyme in breadcrumbs
Use homemade marinara for 100% authenticity
Serve with celery and lemon wedges for freshness
