  • 1 lb chicken tenders
  • 1/2 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Cooking oil spray

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Beat the egg and mix with lemon juice and zest until combined.
  • In another bowl, combine breadcrumbs, parmesan, garlic powder, onion powder, black pepper, and salt.
  • Dunk each tender in the egg mixture, shake off excess, then coat evenly in the breadcrumb mix.
  • Place on the baking sheet in a single layer. Lightly spray the tops with oil.
  • Bake for 20 minutes or until golden and the chicken reaches 165°F (75°C).
  • Let cool slightly before serving. Pair with dipping sauces like ranch or lemon-caper aioli.
