Ingredients
  

  • 2 cups uncooked pasta (elbow or favorite shape)
  • 2 cups shredded cheese (cheddar, mozzarella, or mix)
  • 2 cups milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)

Instructions
 

  • Preheat oven to 350°F (175°C)
  • Cook pasta until al dente; drain and set aside
  • Melt butter in a saucepan, whisk in flour to make a roux
  • Gradually add milk while whisking constantly until thickened
  • Remove from heat, stir in 1.5 cups cheese until smooth
  • Mix sauce with pasta, transfer to baking dish, top with remaining cheese and breadcrumbs
  • Bake for 20 minutes until golden and bubbly
  • Let rest before serving

Notes

For extra creaminess, add a splash of cream or sour cream to the sauce
Experiment with cheese blends (e.g., gouda, parmesan)
Do not overcook pasta; it will continue cooking in the oven
For a crispy top, broil for final 2-3 minutes
