Ingredients

  • 2 chicken breasts
  • 8 oz pasta (fettuccine or your choice)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • Season the chicken breasts with salt and pepper.
  • Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing.
  • Lower the skillet heat and pour in the heavy cream. Allow it to simmer for about 2-3 minutes, stirring frequently.
  • Stir in the grated Parmesan cheese, mixing until it melts and creates a smooth sauce. Season with additional salt and pepper as needed.
  • Add the chopped spinach to the sauce, mixing until it wilts down slightly.
  • Combine the cooked pasta with the sauce, making sure to coat it evenly.
  • Slice the cooked chicken and arrange it on top of the pasta. Serve immediately.

Notes

Use freshly grated Parmesan cheese for a more flavorful outcome.
Let the chicken rest before slicing to retain its juices and keep it tender.
Add minced garlic while cooking the chicken for extra flavor.
For a lighter sauce, substitute heavy cream with half-and-half.
If you enjoy spicy food, include crushed red pepper flakes for a hint of heat.
Swap chicken with shrimp or tofu for a vegetarian option.
Enhance nutrition by adding broccoli or bell peppers.
Use whole wheat pasta for a healthier choice.
