Ingredients
  

  • 4 boneless turkey cutlets (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • 1 cup coconut milk or heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Season turkey cutlets with salt and pepper.
  • Add the turkey cutlets to the skillet and brown them for about 4 minutes on each side until golden.
  • Remove turkey cutlets and set aside. In the same skillet, add sliced onions and cook 5-7 minutes until caramelized.
  • Stir in garlic and cook 1 minute until fragrant. Pour in broth, scraping up browned bits from skillet.
  • Reduce heat to low, stir in coconut milk/cream and thyme. Simmer to thicken slightly (2-3 minutes).
  • Return turkey cutlets to skillet, spoon sauce over them. Cover and cook 10 minutes until done.
  • Adjust seasoning and serve hot.

Notes

For best results, bring turkey to room temperature before cooking. Use a thermometer to check internal temperature (165°F for turkey).
Substitute coconut milk for heavy cream to reduce fat content. Fresh parsley or chives make excellent garnishes.
Let rest 5 minutes before serving to preserve juices.
