Ingredients
  

  • 8 oz spaghetti
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups fresh spinach leaves
  • 1 can (15 oz) diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Parmesan cheese, for serving (optional)

Instructions
 

  • Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the chicken pieces to the skillet, seasoning with salt, pepper, and Italian seasoning. Cook until browned and cooked through, about 6-8 minutes.
  • Pour in the diced tomatoes with their juices. Bring to a simmer and cook for about 5 minutes.
  • Stir in the heavy cream, then add the fresh spinach. Cook until wilted, about 2-3 minutes.
  • Combine the cooked spaghetti with the chicken-tomato sauce. Toss and add reserved pasta water as needed for sauce consistency.
  • Serve hot, topped with Parmesan cheese if desired.
