Ingredients
  

  • 1 ½ cups crushed digestive biscuits
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • ¾ cup fresh lemon juice (about 4 lemons)
  • 1 tablespoon lemon zest
  • 2 tablespoons cornstarch
  • ¼ teaspoon salt

Instructions
 

  • In a mixing bowl, combine the crushed digestive biscuits and melted butter. Mix well until all the crumbs are coated.
  • Press the mixture firmly into the bottom of a greased 9x9 inch baking dish to form the crust. Place it in the fridge to set while you prepare the filling.
  • In a large bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, cornstarch, and salt until smooth.
  • Pour the lemon mixture over the chilled biscuit crust, spreading it evenly.
  • Return the baking dish to the refrigerator and chill until set, approximately 2 hours.
  • Once set, cut into squares and serve chilled for the best flavor.

Notes

For a stronger lemon flavor, add an extra tablespoon of lemon zest to the filling.
Make sure to pack the biscuit crust tightly to ensure it holds together well when cut.
Use fresh lemon juice for the best tangy flavor; bottled juice won't have the same freshness.
Allow the bars to chill thoroughly before cutting, as this helps them firm up for cleaner edges.
