Ingredients
  

  • 4 boneless skinless chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 1 tbsp dried)
  • 2 tablespoons fresh thyme, chopped (or 1 tbsp dried)
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 tablespoon halal ghee (optional, for richness)

Instructions
 

  • Pat chicken breasts dry with paper towels. Season both sides with salt and pepper.
  • Combine minced garlic, rosemary, thyme, and 1 tbsp olive oil in a bowl.
  • Rub herb mixture over chicken breasts. Marinate for 10 minutes to 1 hour in the fridge.
  • Heat 2 tbsp olive oil in a skillet over medium-high heat until shimmering.
  • Cook chicken for 5-6 minutes per side until golden and cooked through (165°F). If using ghee, add and baste last 2 minutes.
  • Let rest for 5 minutes before serving.

Notes

For extra flavor, add lemon zest to the herb mixture
Use a meat thermometer to check internal temperature
Marinating up to 2 hours enhances flavor
