Ingredients
  

  • 1 lb ground beef (preferably lean)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 tablespoon olive oil

Instructions
 

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onions and sauté until soft and translucent, about 5 minutes.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Increase heat to medium-high and add ground beef. Cook until browned, stirring occasionally, 7-10 minutes.
  • Stir in chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for 2-3 minutes to toast the spices.
  • Pour in diced tomatoes and beef broth, then bring to a simmer.
  • Add kidney and black beans, stirring until combined.
  • Lower heat to a gentle simmer, cover, and cook for 1 hour. Stir occasionally to prevent sticking.
  • Taste and adjust seasoning before serving.

Notes

Use high-quality beef broth for deeper flavor.
Chili tastes better the next day as flavors meld.
Substitute pinto or white beans for variety.
Simmer uncovered for 15 minutes to thicken.
Top with shredded cheese, diced onions, or jalapeños.
