Ingredients
  

  • 2 cups cooked chicken breast, diced
  • 4 cups stale bread cubes (ciabatta or baguette)
  • 2 cups ripe tomatoes, chopped
  • 1 cup romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • 1 tablespoon olive oil

Instructions
 

  • Preheat oven to 400°F (200°C)
  • Spread bread cubes on a baking sheet, drizzle with olive oil, and season with salt and pepper
  • Bake for 10-15 minutes until golden and crispy
  • Season cooked chicken with salt and pepper, then chop into bite-sized pieces
  • In a large bowl, combine romaine, tomatoes, and chicken
  • Add cooled toasted bread cubes to the bowl
  • drizzle Caesar dressing over the mixture and toss gently
  • Sprinkle grated Parmesan and garnish with parsley before serving
