Ingredients
  

  • 4 boneless, skinless chicken breasts (approx. 1 lb total)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups chopped romaine lettuce
  • 1/2 cup Caesar dressing (choose halal-certified)
  • Cherry tomatoes, halved (optional)
  • Extra Parmesan for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper
  • In a bowl, whisk eggs. In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper
  • Dip each chicken breast into flour, shaking off excess, then into egg, and finally press into the breadcrumb mixture
  • Sprinkle Parmesan on top of the breaded chicken
  • Bake for 25-30 minutes until golden and internal temperature reaches 165°F
  • While baking, toss chopped lettuce with Caesar dressing, halved cherry tomatoes (if using), and salt/pepper to taste
  • Once done, slice chicken into strips and arrange over the dressed lettuce
  • Garnish with additional Parmesan cheese

Use halal-certified Caesar dressing to ensure compliance
Fresh chicken breasts ensure better texture and taste
Crisp parmesan can be made by toasting grated Parmesan in the oven for ~10 minutes if preferred
Store leftover chicken and lettuce separately for fresh assembly
