Ingredients
  

  • 4 bone-in or boneless chicken thighs (about 1 inch thick)
  • 1 large onion, sliced
  • 2 cups low-sodium chicken broth
  • 1 cup all-purpose flour (for dredging)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter

Instructions
 

  • Season chicken thighs with salt, pepper, garlic powder, and paprika. Let rest for 10 minutes.
  • Place flour in a shallow dish and dredge each chicken thigh, shaking off excess.
  • Heat vegetable oil in a large skillet over medium-high heat. Brown chicken thighs for 3–4 minutes per side, then set aside.
  • Add sliced onions to the skillet and sauté for 3–5 minutes until translucent and lightly browned.
  • Reduce heat to medium, pour in broth, and scrape up browned bits from the pan.
  • Return browned chicken thighs to the skillet, ensuring partial submersion. Add butter, cover, and simmer 20–25 minutes until tender.
  • Let rest for a few minutes before serving to enhance juiciness.

Notes

Let chicken thighs come to room temperature for even cooking.
Use a meat thermometer: chicken should reach 165°F (74°C) for safety.
Adjust flour to 1/2 cup for a lighter gravy or add more for thicker consistency.
Add a splash of halal Worcestershire sauce (avoid alcohol-based varieties) for extra flavor.
