Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1 teaspoon olive oil
  • Salt and pepper, to taste
  • 6 cups romaine lettuce, chopped
  • 1 ripe avocado, diced
  • 1/2 cup creamy Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup croutons

Instructions

  • Season the chicken breasts with olive oil, salt, and pepper on both sides.
  • Heat a skillet over medium heat and add the seasoned chicken. Cook for approximately 5-7 minutes per side or until fully cooked (internal temperature should reach 165°F).
  • Remove the chicken from the skillet and let it rest for a few minutes. Once rested, slice the chicken into thin strips.
  • In a large mixing bowl, combine the chopped romaine lettuce and diced avocado.
  • Drizzle the creamy Caesar dressing over the salad mixture and gently toss to coat the greens and avocado evenly.
  • Add the sliced chicken on top of the salad, and sprinkle with Parmesan cheese and croutons for added crunch.
  • Serve immediately and enjoy your creamy Caesar chicken salad!

Notes

Marinate chicken in Caesar dressing for 30 minutes for extra flavor.
Grill the chicken instead of pan-searing for a smokier flavor.
Use fresh Parmesan shavings instead of pre-grated for a more intense cheese flavor.
Customize by adding cherry tomatoes or cucumbers for more freshness.
Store leftover dressing separately to prevent the salad from becoming soggy.
For a vegan option, replace chicken with chickpeas or grilled tofu and use dairy-free Caesar dressing.
