Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice

Instructions
 

  • Preheat oven to 350°F (175°C)
  • Combine melted butter, flour, and 1/2 cup sugar to form the crust
  • Press the crust mixture into the bottom of an 8x8-inch baking dish
  • Bake the crust for 15 minutes, or until lightly golden
  • Whisk together the eggs, remaining 1/2 cup sugar, and lemon juice for the filling
  • Pour the lemon filling over the cooked crust and spread evenly
  • Return the dish to the oven and bake for 20 minutes, or until the filling is set
  • Allow the bars to cool completely in the dish
  • Cut into 12 squares and dust with powdered sugar if desired

Notes

Using fresh lemon juice enhances the flavor; bottled lemon juice may not yield the same fresh taste.
For cleaner cuts, pop the bars in the fridge for an hour before slicing them.
Always let the bars cool completely to ensure the filling sets properly.
