Ingredients
  

  • 2 chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for frying

Instructions
 

  • Preheat your oven to 400°F
  • Flatten chicken breasts to an even thickness with a meat mallet
  • Beat egg in a shallow bowl and season with salt and pepper
  • In another bowl, mix breadcrumbs and grated Parmesan
  • Dip each chicken breast into egg mixture, shake off excess, then coat thoroughly with breadcrumb mix
  • Heat olive oil in a skillet over medium-high heat
  • Cook chicken for 4-5 minutes per side until golden brown and cooked through
  • Transfer to a baking sheet and spoon marinara over each breast
  • Sprinkle with mozzarella cheese
  • Bake for 10 minutes until cheese is bubbly and golden
  • Remove from oven, let rest for a few minutes, and serve hot

Notes

Ensure chicken is evenly flattened for uniform cooking
Use panko breadcrumbs for extra crunch
Let chicken rest after frying to retain juiciness
Homemade or store-bought marinara will both work
