Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1 head of romaine lettuce, chopped
  • 1 cup spring greens (arugula, spinach, or mixed greens)
  • 1 cup croutons
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing
  • Salt and pepper to taste

Instructions
 

  • Preheat grill to medium-high heat and oil grates.
  • Season chicken breasts with salt and pepper. Marinate (optional) for 30 minutes if desired.
  • Grill chicken 5-7 minutes per side until 165°F. Let rest before slicing.
  • In a bowl, combine romaine, spring greens, croutons, and Parmesan.
  • Slice grilled chicken and add to salad.
