  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 2 potatoes
  • 3 tablespoons butter
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 350°F (175°C)
  • Prepare the meatloaf mixture by combining ground beef, egg, breadcrumbs, and milk in a bowl
  • Shape the mixture into a loaf pan, packing it tightly
  • Bake for 50 minutes, or until the internal temperature reaches 160°F (70°C)
  • Boil peeled and chopped potatoes in salted water for 15-20 minutes, until tender
  • Drain potatoes, return to the pot, and mash with butter, salt, and pepper
  • Let mashed potatoes cool slightly before serving

Notes

Add finely chopped onions or bell peppers for extra moisture and flavor.
Use lean beef for a healthier version; add an extra tablespoon of milk if needed.
